These past couple of days have been cold and dreary. Like those days where getting out of bed seems like the biggest feat. I was looking for a little something to pick me up and make me excited about Fall. It’s a season that I totally adore, but the gray days that occur are not great for me. Of course whenever I think of pick me ups it tends to be food related! There is nothing a chocolate chip cookie can’t help in my book! I surprisingly wasn’t thinking of something sweet, but rather savory and I remembered a corn chowder my brother in law made that I adored. I quickly texted for a recipe and now I’m here to share it with you! Thanks, Steve!
Here is what you’ll need:
-2 tablespoons of salted butter
-extra virgin olive oil
-1 spanish onion -diced
-1 tablespoon of minced garlic
-1 teaspoon of dried thyme
-1/2 cup of all purposed flour
-6 cups of vegetarian/vegetable stock
-2 cups of heavy cream
-2 peeled and diced Idaho potatoes
-6 ears of corn or 4 and half cups of canned corn kernels
-Salt and pepper – to taste
-1/4 cup of chopped parsley – mainly for garnish. You can skip if you like.
-Bacon – 1 package.
Directions
-In a soup pot over medium heat add a splash of olive oil and butter and diced onions, garlic and thyme. Let cook for 10 mins. Then coat onion, garlic and thyme mix with flour.
-Add 6 cups of vegetable stock and bring to a boil.
-Add 2 cups of heavy cream and diced potatoes.
-Cook bacon separately.
-Boil for 10 mins. The potatoes need to be soft at this point. The potatoes release starch that helps thicken the chowder.
-Add corn kernels and salt and pepper to the soup. Chop up most of bacon and add. Let simmer for 15 mins.
-Once soup is in bowls then garnish with parsley and some bacon pieces.
-Enjoy with a piece of sour dough bread!

I love making chowder! I add carrots, red bell pepper, chile pepper, and celery and cut down the corn and cream. In fact, all I add besides stock is pepper jack cheese. It is SO delicious and perfect for fall. I need it to be a bit cooler before I make it, though…

My living room is one of the rooms that evolved drastically from when we first moved one. Originally I painted the walls chocolate brown and did accents of white, blue and orange. That lasted maybe 2 years.
Our dining room sat empty for months. Okay maybe it was empty for just a handful of weeks and then we couldn’t take it anymore and put in a folding table and plastic outdoor chairs, but in my mind that was still empty.
