A couple of weekends ago we went apple picking and left with around 70 apples. Jon and I each got a basket to fill and the boys went nuts filling them up! The favorites were fuji, granny smith and golden delicious.
We had so many that I didn’t know what to do. I made caramel apple butter and apple strudel and apple pie filing and I still had more! So, I started mixing a little of one recipe with a little of another and used the frozen pie crust I had in the freezer to make an apple galette. It was so easy and looks really impressive!
2-3 large tart apples. I used a mix of granny smith and fuji
4 tablespoons salted butter
1/4 cup of brown sugar
1 teaspoon of vanilla extract
1 teaspoon of ground cinnamon
1 pie crust – make sure you thaw before hand
Preheat oven to 400 degrees.
Step 1: Peel and cut apples into slices.
Step 2: Use a skillet at medium heat and melt butter.
Step 3: Add apple slices and coat them with butter. Let cook for a couple of minutes.
Step 4: Add brown sugar, vanilla extract, ground cinnamon. Let apples get a bit soft. Around 10 mins, but you can leave longer if you like them softer.
Step 5: Use parchment paper on a cookie sheet and roll out pie crust.
Step 6: Add apple mixture to the majority of the pie crust, but leave about 1/2″ of a border around the perimeter.
Step 7: Roughly fold over the border into the apple mixture.
Step 8: Add an egg wash to the pie crust area.
Bake for 25 mins.
Really easy, really yummy and really impressive looking!
