In NYC Cafe Habana is known for their Cuban Corn. When I’m shopping in Soho it’s always where I stop to get a little fuel to continue shopping. With the last big holiday weekend of the summer approaching I thought it was only fitting to share an easy recipe that will work for any BBQ.
It looks fancy, but it’s super easy to make.
Simply boil your corn. I actually wasn’t sure how long to do this for and I found a handy recipe. My corn came out perfectly cooked!
Once your corn is done I let it cool for a little bit and just snapped each ear in half and stuck skewers into them so they had handles.
In a bowl mix together:
6 tablespoons mayonnaise
1 tablespoon of minced garlic
3/4 teaspoon of kosher salt
3/4 teaspoon cayenne pepper
Spoon the mixture onto your corn.
Then sprinkle 3/4 cup Cotija cheese (This is a Mexican cheese that isn’t available everywhere so you can also used crumbled feta) onto of corn with mixture.
I like to sprinkle a little additional cayenne pepper over the top. Add lime wedges for a little squeeze and all done!
It’s always a big hit!
