I’ve really been trying to step up my mom game especially when it comes to Hudson’s school activities. I never signed up to be class mom so, I missed out on that, but I still try to go above and beyond when it comes to all of the class parties. Today they are celebrating Thanksgiving and I sent Hudson to school with faux pumpkin pie made from rice krispy treats!
Isn’t it adorable? Tastes yummy too! Basically you just follow the traditional recipe for rice krispy treats. For his class I made two pies ( 8″ round tins).
1 box of rice krispy cereal
3 bags of mini marshmallows
1 stick of butter
Orange food dye
To make the pie crust border we used: 4 cups marshmallows, 3 tablespoons butter, and 4 cups of cereal. That makes enough to make two borders.
To make the pumpkin filling we used: 6 cups of marshmallows, 4 1/2 tablespoons of butter and 6 cups of cereal plus a couple of drops of orange food dye. Add orange food dye to the marshmallow/butter mixture and then coat the cereal. Again this is enough for 2 pies so, split this up between the two 8″ round tins.
Let them set overnight or at least for a couple of hours and then top each slice with one mini marshmallow for your faux whipped cream.
Effortless Tip: Use cooking spray like Pam to grease the pans. This make it super easy to cut your slices of pie out.
